Bestie and I are always exchanging recipes since we both have somewhat picky guys. This recipe got the Eric stamp of approval, after I made it it got the Andrew stamp of approval too. My theory is if both of our guys like it, chances are yours’ big or small will too.
Easy recipe too, I skipped the sesame oil since I thought I had some and used olive oil, I think it worked out fine.  Leftovers tasted great after a toaster oven cycle.

Shredded-Chicken-Wonton-Tacos

Shredded Chicken Wonton Tacos with Taco Quinoa

Ingredients (Serves 2)

  • 6 oz of leftover chicken from Skinny Chicken Taquitos
  • 1  cup uncooked Quinoa (Yields 4 cups, 2 cups leftover great for on top of salad).
  • 1 packet taco seasoning.
  • 12 Wonton Wrappers
  • 1/2 cup of 2% Cheese
  • Shredded Lettuce

Steps

1. Preheat your oven to 400 degrees to make the taco shells.

2. Start your quinoa, follow the directions per the brand but add your packet of taco seasoning to the water.  (Makes awesome flavorful quinoa, soo yummy!)

3. Spray a Pyrex, drape wonton wrappers on the rim, spray again, pop in the oven for 3-5 minutes until golden and crispy.  (Rather than getting a bunch of pans dirty I did three cycles of this while the quinoa was cooking.

4. Heat up your left over chicken, dole out your servings into ramekins for easy portioning. (1/2 cheese, 3 oz shredded chicken, 1 cup cooked taco quinoa)Shredded-Chicken-Wonton-Tacos (5)

Just wanted to share one of the things I’ve made with my handy and yummy taco shredded chicken left overs from the Skinny Taquitos I made Sunday. I made this today for lunch and it was pretty awesome.

How are you going to use your leftover chicken?

Hungry Girl introduced me to the the wonder of Won-Ton wrappers for a low cal and low fat crispy crunch, then I discovered their big brother egg roll wrappers, more crisp for less annoying rolling. Egg roll wrappers way less cal and fat than the traditional fried tortillas. These were an idea that worked out super well and will definitely enter our dinner rotation!

HK-Chicken Taquitos

Ingredients

  • 4 Chicken Breasts (This will leave you lots of leftovers to freeze or use in other dishes, it tastes amazing! I made the taquitos pictured and still have 28 oz of chicken left!)
  • 16 oz Jar of Salsa
  • Taco Seasoning Packet
  • Egg Roll Wrappers (Find near the Tofu, even Super Wal-mart carries them, they freeze and thaw well too).
  • 2% Cheese

Directions

  1. Dump salsa and taco seasoning into your crockpot and mix, add chicken. Cook on high for 4-6 hours or low for 6-8 hours.
  2. Shred chicken in your crockpot with two forks, stirring to help it absorb any of the liquid.
  3. Preheat oven to 400 degrees.
  4. Line baking sheet with foil and spray it with cooking spray.
  5. Build your taquito with egg roll wrapper, shredded chicken, and a sprinkle of cheese. Dip your finger in water and run it along the far end of the egg roll wrapper. This helps seal the wrapper.
  6. If you want skinnier taquitos you can cut your egg roll wrappers in half.
  7. Spray tops of taquitos well with cooking spray.
  8. Bake for 10-15 minutes until golden brown.
  9. Serve with sour cream and guacamole.

Ideas for your leftover shredded chicken: tacos, taco salad, quesadillas, freeze to make these again in the future, you can freeze the wrappers too.

Last night I needed a fast dinner, and I knew we were making our Turkey Tacos the next night, so I knew I was opening all this anyway, so here’s my 432 cal dinner creation!

  • 1 Tortilla
    Flatout bread would also work great for this, and would be better nutritionally.
  • 1/2 cup 2% Shredded Cheese, I used Mexican
  • 3 oz. Southwestern Grilled Chicken Breast
  • 1 Tomato
  • Spray Oil (I normally use spray olive oil, but I’m out).
Directions:
  1. Preheat your oven or toaster oven to 300.
  2. Line your pan with foil, lightly mist it with oil so your tortilla doesn’t stick.
  3. Add your tortilla, lightly mist it.
  4. Add a 1/4 cup of shredded cheese, followed by your tomato sliced, then a single serving of chicken, then top with another 1/4 cup of cheese.HK-Chicken-Tortilla-Pizza-2

Sunday morning Andrew and I watched the “Chinese” episode of Hungry Girl’s TV show, and that night we made this. While a lot of her stuff requires too much stuff. super processed stuff, or million steps, this recipe was less fuss and didn’t have anything you’ll never use again in it, score!
This is definitely going to be our go to craving Chinese recipe! Totally satisfying for incredibly low cal.

(We added 1 lb. of chicken tenderloins to make this our entire dinner)

Ingredients
  • 3 packages House Foods Tofu Shirataki Spaghetti Shaped Noodle Substitute 
    (First time using these, they are weird, but definitely pretty amazing for 3 carbs a serving! I found these near the Tofu at my Harris Teeter).
  • 1/4 cup reduced-sodium/lite soy sauce
  • 1 tbsp. cornstarch
  • 1 tbsp. granulated sugar (or granulated no-calorie sweetener)
  • 2 tsp. chicken-flavored powdered consommé  (The bullion to us common folk)
  • 1 cup quartered mushrooms  (skipped don’t like em)
  • 1 cup thinly sliced zucchini
  • 1 cup bean sprouts  (Never got these before, nice crunch, and I only needed $.27 worth for the recipe, unheard of)
  • 1/2 cup chopped scallions (grew my own, thanks Pinterest)
  • 1/4 cup shredded carrots
  • 1 bag (about 12 oz.) frozen Chinese-style stir-fry mixed vegetables
Directions
Use a strainer to rinse and drain noodles. Thoroughly pat dry. Roughly cut noodles and set aside.  (The liquid they come in smells horrible!! Rinse and pat dry, she stresses how important this is, you can nuke them if the smell bothers you, directions on the bag, this product is going to get my through pasta cravings for the next 6 months! Do these first so they can sit drying on the towel).

My window sill chives after their hair cut, so glad I started growing them, I ALWAYS forget them at the store, love them on salads too!
To make the sauce, in a medium bowl, mix soy sauce, cornstarch, sugar, consommé, and 1/2 cup hot water. Set aside.
In our case this is where we cooked our chicken with salt and pepper.

Bring a large skillet or a wok sprayed with nonstick spray to medium-high heat on the stove. Add fresh and frozen veggies. Cook and stir until hot, 5 - 7 minutes.

Stir sauce and add to the skillet or wok. Continue to cook and stir until sauce has thickened, 3 - 4 minutes.  (This is where we added our chicken).

Add noodles and cook and stir until hot, 1 - 2 minutes. Serve and enjoy!

A simple week night dinner from Gina’s Skinny Recipes, LOVE HER!

See the original recipe on her site, she calls it Baked Chicken Parmesan. I adapted it a little bit.

  • 2 (8 oz) chicken breast halves, sliced in half
  • 3/4 cup seasoned breadcrumbs (I used italian white breadcrumbs since I was too lazy to make whole wheat, make sure to add seasonings if you have plain bread crumbs)
  • 1/4 cup grated Parmesan cheese (Fresh is always better!)
  • 2 tbsp butter, melted
  • 3/4 cup reduced fat mozzarella cheese  (2% shredded worked well)
  • 1 cup marinara (We skipped this, but I think it would have been nice)
  • cooking spray

1. Preheat oven to 450

A's not a tomato sauce kinda guy so  I skipped that, it was still good without it.

We ate 1 half a chicken breast each with a baked potato and were plenty full.

In fact even my Oma has made it before me since I told her about the recipe, so credit for some of the edits go to her =) It took me so long to make it since I  have a ‘retro’ 80s crock pot from my Mom so I  wanted to be around while it cooked for the first time. This was the perfect lazy Saturday meal, Andrew and I both LOVED it, soo good, soo easy. It’s definitely going to become a regular, like so many of the Skinny Taste recipes we’ve been trying lately. We served ours on a little bed of brown rice, which was perfect! I was so excited to finally eat it I forgot to add cheese or sour cream, but it doesn’t really need it since it tastes so good even without it.

Crock Pot Chicken Taco Chili

Servings: 10 • Size: 1 1/4 cups • Old Points: 3 pts • Points+: 5 pts

  • 1 onion, chopped
  • 1 16-oz can black beans (Drain all of the canned goods pretty well, no need to let sit in a strainer though) 
  • 1 16-oz can kidney beans
  • 1 8-oz can tomato sauce
  • 10 oz package frozen corn kernels (I added my corn for the last 30 min, nuked for a little bit so they weren’t super frozen still)
  • 2 14.5-oz cans diced tomatoes w/chilies  (My store brand rotel cans were 10 oz, I still used 2 and it worked out fine.)
  • 1 packet taco seasoning
  • 1 tbsp cumin
  • 1 tbsp chili powder (I skimped this a little bit just in case, but even for a whimp, so use the full amount)
  • 24 oz (3-4) boneless skinless chicken breasts (I had defrosted tenderloin I needed to use up, and they cooked and shredded fine, I worried they would cook faster than the breast)
  • chili peppers, chopped (optional) (skipped)
  • 1/4 cup chopped fresh cilantro (skipped)
  1. Combine beans, onion, chili peppers, corn, tomato sauce, cumin, chili powder and taco seasoning in a slow cooker. (Drain everything before throwing it in, hold off on the corn so it doesn’t get mushy).
  2. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. (I cooked mine for 6 hours keeping an eye on it, I think my ‘high’ is a little too much so I put it on low when I felt to was boiling too steady)
  3. Half hour before serving, remove chicken and shred. Return chicken to slow cooker and stir in. Top with fresh cilantro. Also try it with low fat cheese and sour cream (extra points). (Shred the chicken using two forks, it’s super simple, adding it back in really seeps the flavor into the chicken, this is also when I added the corn in.

I know this looks super duper disgusting, at this point I was worried something was wrong, but I just split them up and turned them over, and when they cooked some more they turned back into normal chicken.

We loved how the chicken tasted in this recipe, you just have to realize due to the mush the apples and onions turn into you're only going to want a bite or two of them, they are there for flavor not eating.

Simmering poultry in fat-free liquid is a moist, low calorie way to flavor food. Experiment with other types of broths and juices, too.

Ingredients
  • 2 tsp vegetable oil  
  • 1 pound(s) uncooked boneless, skinless chicken breast, four 4-oz pieces  
  • 2 Tbsp all-purpose flour  
  • 1 large onion(s), sliced  
  • 2 medium apple(s), firm, cored and sliced  (I used Granny Smith which don't cook as well as others)
  • 1 cup(s) apple cider  (I used Simply Apple apple juice since it's not fall so I couldn't find cider) 
  • 1 cup(s) fat-free chicken broth  
  • 1/2 tsp table salt  
  • 1/2 tsp ground ginger  
  • 2 tsp cornstarch  

Instructions
In a large, heavy-bottomed skillet (I used my large stock pot), warm oil over high heat. Toss chicken with flour in a medium bowl, patting off excess. Place chicken in skillet and brown well on both sides. Remove chicken from pan and set aside. 

Beautiful light breaded chicken.
Reduce stove temperature to low and add onion to skillet. Sauté, stirring often, until onion is tender and lightly browned.

Stir in apples, cider, chicken broth, salt, ginger and chicken. Bring to a simmer, cover and cook for 30 minutes. Use a slotted spoon to transfer chicken, onions and apples to a serving dish.

Rather than slotted spooning it, we pulled the chicken and then strained out the apples, then stuck the juice back in the pan.
In a small bowl, whisk together cornstarch and 2 to 3 tablespoons of pan juices. Combine cornstarch mixture with remaining pan juices, whisking constantly. Simmer for one minute. Pour sauce over chicken and serve. Yields 1 chicken breast and about 3/4 cup of apple-onion mixture per serving.

Since the chicken we use is boneless and cubed, the cooking time is much less than it is for traditional chicken and dumplings.

Ingredients
  • 2 tsp canola oil  
  • 1 pound(s) uncooked boneless, skinless chicken breast, cut into 1-inch pieces  
  • 1/2 tsp table salt  
  • 1 medium onion(s), chopped  
  • 2 medium carrot(s), chopped  (I just chopped up some baby carrots)
  • 2 stalk(s) celery, chopped (medium)  
  • 3 1/2 cup(s) reduced-sodium chicken broth  (We ended up adding another can in order to have room for the dumplings)
  • 1 medium uncooked potato(es), russet, (8-ounces), cubed  (We were bad and added 2 potatoes, hence we needed more broth)
  • 1/4 cup(s) uncooked string beans, trimmed and cut into 1-inch pieces  (I just used some frozen)
  • 1 cup(s) frozen green peas  
  • 1 2/3 cup(s) Bisquick Reduced-Fat Baking Mix, all-purpose, or other brand  (We used the bisquick)
  • 2/3 cup(s) fat-free skim milk  
  • 1 1/2 tsp dried sage, or 1 teaspoon chopped fresh sage  
  • 1/2 tsp black pepper, coarsely ground  

Instructions
Heat 1 teaspoon of the oil in a nonstick Dutch oven (I'm dutch ovenless so we just used my large non stick stock pot) over medium-high heat. Add the chicken; sprinkle with the salt and cook, turning occasionally, until browned, about 6 minutes. Transfer the chicken to a bowl; set aside.(We eneded up using more oil since these recipes are never realistic)

Add remaining 1 teaspoon oil to the same Dutch oven, then add the onion, carrots, and celery. Cook, stirring occasionally, until the vegetables begin to soften and brown slightly, about 6 minutes. Add the broth and potato; bring to a boil. Reduce the heat and simmer, covered, until the potato is almost tender, about 10 minutes. Add green beans and cook until crisp-tender, about 6 minutes. Stir in the browned chicken and the peas; heat through, about 2 minutes.

Meanwhile, to prepare the dumplings, combine the baking mix, milk, sage, and pepper in a bowl until a soft dough forms. (This makes A LOT of dumplings, you could easily save some points by halving this and still feel satisfied)

Drop the dough, by rounded tablespoons, onto the simmering stew, making a total of 6 dumplings. Simmer, uncovered, 10 minutes. Then cover and simmer until the dumplings have doubled in size and are cooked through, about 10 minutes longer. Yields 1 cup stew with 1 dumpling per serving.

Notes
Sage gives the dumplings a flavor reminiscent of stuffing and goes well with this comforting stew. (Sage def makes the dumplings awesome)

P.S. You may want to half this recipe and do 1.5 servings (more realistic) each since due to the flour leaching into the broth it reheats more stew like in a way not too appetizing. Andrew who doesn't like soup really liked this recipe.

This is my first real attempt at battering and baking something, it went better than I thought.

Recipe from Weight Watchers - Baked Chicken with Sun-dried tomato sauce

We skipped the sauce and made sweet potatoes as our side, A enjoyed his with some light blue cheese, I had some with some bbq sauce.

Ingredients
  • 3/4 cup(s) wheat germ   (find it near the oatmeal, not as weird or scary as I thought it would be)
  • 1 tsp table salt, divided  
  • 1/8 tsp black pepper  
  • 2 large egg white(s), slightly beaten  
  • 1 pound(s) uncooked boneless, skinless chicken breast, four 4 oz pieces   
Directions
  1. Preheat oven to 375ºF. Lightly coat a baking sheet with cooking spray.
  2. Mix wheat germ, 1/2 teaspoon salt and pepper and pour onto a plate or flat bowl. Place slightly beaten egg whites in another flat bowl.
  3. Dip each piece of chicken in egg white, then in wheat-germ mixture to coat. Place chicken pieces on baking sheet and bake for 20 minutes.
Ready  to go. 
Dipping, spinning, and coating was easier than I thought. (Yes I touched the meat...)
Our pound was 3 pieces, so we had left over wheat germ, so I'll prob use less next time.
Looks pretty "real" doesn't it.
We paired it with some red and yellow onions and sweet potato baked in the microwave.  
It was pretty awesome, we each ate just one of the big pieces, for 4 points.
